Dinner Menu

Dinner menus can be served plated, Family Style, or Buffet. Pricing subject to count, location and market price of food.
we are a custom caterer, we can modify change, or create based on your taste, and desire. If you do not see want you want on the menu let us know.

Chicken

Bruschetta:
Grilled chicken breast topped with roasted grape tomatoes, garlic, fresh basil, garlic and drizzled with Balsamic glaze.

Marsala:
Breaded chicken sautéed in a Marsala wine sauce with wild Mushrooms

Grilled:
Grilled chicken with your choice of seasoning. Teriyaki, bbq, seasoned, pineapple chutney

Piccata:
lightly breaded breast with capers and zucchini in a lemon and herb sauce

Maple Dijon:
grilled breast glazed with a maple Dijon sauce

Stuffed:
Asparagus and   garlic herb cream cheese, Cordon blue, or spinach and herbed cream cheese

Smoked quarters:
Chicken quarters, hickory smoked for 13 hours served with your choice of 3 sauces

 

Pork/Turkey

Chops:
Bone in Pork chop grilled to medium seasoned, or glazed in a sauce of your choosing

Roasted Pork Loin:
Seasoned with Garlic Rosemary blend, or topped with a mushroom white wine demi glaze

Baby Back Ribs:
½ slab per person smoked or gilled with a Carolina rub, and served with 2 sauces

Turkey Breast:
Slow roasted Turkey Breast covered in a turkey gravy

 

Beef

Grilled Sirloin:
8oz. seasoned Sirloin grilled to medium rare perfection with a demi glaze

Filet Mignon:
8oz. of fork tender filet, seasoned and grilled to medium rare perfection covered with a Cabernet Mushroom Sauce (optional)

Beef Tips:
Beef tips slow cooked in a beef gravy and Mushroom sauce.

Prime Rib:
Slow roasted or smoked to medium rare, with a garlic and rosemary dry rub. Served with au jus.

Vegetarian:

Roasted Portobello:
Roasted portobello with asparagus, red peppers, basil pesto, and balsamic glaze.

 

Seafood

Baked Lemon Salmon:
baked in a lemon dill cream sauce topped with parsley and herbs

Baked Glazed Salmon:
baked with your choice of glaze (common: Brown sugar mustard, honey garlic, or honey and soy)

Crab legs:
steamed Alaskan King crab legs, served with lemon and garlic butter

Seared Sea Scallops:
lightly dusted with salt and pepper and served over a Pomegranate dressed salad

Bacon wrapped fish:
Cod, halibut, haddock or stripped bass filet lightly wrapped n bacon and sautéed in olive oil served with a Jalapeno Tater sauce

Spicy grilled Shrimp:
grilled with a lime zest rub and chili paste. Served with an Asian fish sauce.

 

Pasta

Spaghetti:
Thin noodles covered in either a meat or marinara sauce with meatballs

Lasagna:
Meat sauce or vegetarian Lasagna served with breadsticks

Spinach Tortellini:
Roasted Garlic and spinach filled tortellini tossed with sun dried tomatoes in a garlic cream sauce and topped with fresh Parmesan

Mushroom and Chicken Campanella:
sautéed portobello, spicy chicken, Rom tomatoes and parmesan cheese with campanile pasta in an Alfredo sauce.

Mostaccioli:
Spicy Italian sausage and pasta tossed in a Bolognese and topped with shredded mozzarella and Parmesan

 

Buffet Only Options

Taco Bar:
choice of 2 meats, hard / soft tacos shells, Lettuce Tomato, Shredded cheese, Sour cream, Chips & Salsa, Guacamole, and Spanish rice. (Add queso for an additional charge)

BBQ Buffet:
Choice of 2 meats: Pulled pork / Chicken, Ribs, chicken thighs, wings, meatballs served with 2 sides (add Mac and cheese for an additional charge)

Breakfast Buffet:
Scrambled eggs, Bacon, Sausage, Hash browns, Fruit. (add biscuits and Gravy for an additional charge)

 
Entrée Accompaniments:

Baby red Mashed potatoes:
mashed red potatoes (with skin) with butter, cream cheese and Garlic

Rosemary Potatoes:
roasted reds with Rosemary and herbs

Carrots:
Glazed and roasted in a honey glaze

Asparagus:
grilled, roasted with a garlic and herbs, or steamed

Green Bean Almandine:
Fresh green bean beans sautéed and tossed with Toasted Almonds

Roasted or sautéed Vegetables:
carrots, zucchini, peppers, and asparagus

Stir Fry Medley:
Fresh sautéed Broccoli, peppers, onions zucchini and pea pods.

Corn:
fresh or on the cob

Brussel Sprouts:
steamed and served in a creamy butter sauce

 

Salads

House:
fresh tossed greens with Cucumber, tomato, parmesan cheese, and cruotons with choice of 3 dressings

Caesar:
Fresh romaine tossed with Caesar dressing, Parmesan and croutons.

Cob:
Fresh tossed greens, egg, chopped chicken, Grape tomatoes, blue cheese crumbles, green onion, honey mustard dressing
